Make time for an ‘Incredible Picnic’

LOBSTER ROLL - WITH APPLES & HERBS


Makes 2, thick baguette sandwiches.


  • Meat from 1 cooked lobster (about 1 3/4 cups (450 mL))
  • 2 tbsp (30 mL) mayonnaise
  • 1 tbsp (15 mL) finely cubed peeled tart apple
  • 2 tsp (10 mL) chopped chives
  • 2 tsp (10 mL) chopped tarragon
  • Sea salt and freshly ground pepper to taste
  • Handful of crisp lettuce
  • 1 fresh baguette, or your bread of choice
  • 1 tbsp (15 mL) butter, at room temperature

  • Remove meat from cooked, cooled lobster and place in a small bowl (1 1/2 lb lobster yields about 1 3/4 cups meat).
  • Add remaining ingredients and stir to combine. Slice baguette into two 15-cm (6-inch) lengths - slicing horizontally, almost but not completely through.
  • Lightly butter baguettes and line with crisp lettuce.
  • Top with lobster filling and serve.

Want to go on a picnic and enjoy great food from Nova Scotia? It is time for the fifth annual Incredible Picnics in many communities across the province.

Some of the 12 events are picnic-style, and others are sit-down suppers. All showcase locally-grown and produced items, with food prepared by local chefs and producers.

There will be an Incredible Picnic at the Halifax Seaport Farmers’ Market this Sunday, August 19, from 11 a.m. to 5 p.m. It will be a local food street party in front of the market building at 1209 Marginal Road. You can buy tasty treats and enjoy them while listening to local bands.

Picnics also will take place this weekend in Musquodoboit Harbour, Masstown and North Sydney. More events will be held later this month and in early September in other parts of the province, such as Lower Wedgeport, Bridgewater, Hubbards, Berwick and Sydney River.

In addition to delicious food, the Incredible Picnics feature entertainment and fun for the whole family, including activities for kids.
